Immortalized world-wide by some of Belgium’s most prestigious companies (Dandoy, De Strooper), the gaufrette is characterized by an extraordinary crispness and the checkerboard appearance of its small squares.
In 2006, the VLAM (Flemish Office for agro-marketing) awarded the official label "Streekproduct uit de Westhoek" (Regional Product of Westhoek) to the gaufrette made by the Biscuiterie Jules Destrooper. In Westhoek in Belgium, this gaufretteest is called "Lukke". The origin of this name goes back to the time when this delicacy was offered on New Year’s Eve. In the past, the tradition was that the children presented their New Year wishes (tradition known as the "Lukken 'in Dutch) to their godparent. To thank them for these wishes, they received in return thin and crispy galettes, sometimes with a drink. Every housewife had her own recipe. Baking wafers was part of a ritual that began the day after Christmas and ended on New Year's Eve. It was a firmly established craft! Each home had its own recipe!
This"gaufrette" can be filled in different ways, either with caramel or vanilla, depending on the region where it is consumed. It is then known under very different names, such as Gaufres Meert or Gaufres à la Vergeoise (brown sugar).
